Bolognese is a family favourite – a deceptively simple recipe with a few tricks to really bring out the intense flavours.

Bolognese
Mix the tomato paste with the vegetables, rosemary and a little oil. Fry this off in a wide bottomed pot on a medium heat.
When it has started to brown off a little add the ground venison. Make sure to keep the heat on so as to seal the meat rather than boil it.
When the meat has sealed add the wine, cook a little longer to release the alcohol and reduce the liquid and then add stock.
Pop the lid on leaving a small crack for steam to escape and cook for at least an hour or as long as you like/can wait.
Pasta
Prepare and cook your favourite pasta. Spaghetti is recommended.
Topping
Combine all topping ingredients.
To serve
Warm the bolognese in a pan and add the freshly cooked pasta and combine well.
